Spicy Korean Cucumber Salad
A crisp and vibrant side salad featuring thinly sliced cucumbers tossed in a garlic, soy, and gochugaru dressing.
Ingredients
- 2 lbs Persian cucumbers, thinly sliced
- 1/2 tsp fine sea salt
- 1 tbsp Korean red pepper flakes
- 2 stalks green onion, chopped
- 1 garlic clove, minced
- 1 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tsp toasted sesame oil
- 1 tsp granulated sugar
- 1 tsp toasted sesame seeds

Toss 2 lbs thinly sliced Persian cucumbers with 1/2 tsp fine sea salt in a bowl and let sit for 10 minutes.

Gently squeeze the cucumbers to remove excess water, then drain.

In a mixing bowl, combine 1 tbsp Korean red pepper flakes, 2 stalks chopped green onion, 1 minced garlic clove, 1 tbsp soy sauce, 1 tbsp rice vinegar, 1 tsp toasted sesame oil, and 1 tsp granulated sugar.

Add cucumbers to the bowl and toss until evenly coated.

Garnish with 1 tsp toasted sesame seeds and serve cold.
