Ensalada Mixta
A traditional Spanish salad featuring crisp lettuce, juicy tomatoes, white asparagus, tuna, and hard-boiled eggs. Dressed simply with extra-virgin olive oil and sherry vinegar.
Ingredients
- 2 large eggs, quartered
- 6 cups Romaine lettuce, chopped
- 2 plum tomatoes, wedged
- 1/2 white onion, thinly sliced
- 8 spears canned white asparagus spears, drained
- 1/2 cup stuffed green olives
- 2 cans canned tuna in olive oil, drained
- 3 tbsp extra-virgin olive oil
- 1 tbsp sherry vinegar
- 1/2 tsp salt

Bring water to a boil in a small pot and cook 2 large eggs for 9 minutes.

Cool 2 large eggs in cold water, peel them, and cut into quarters.

Arrange 6 cups chopped Romaine lettuce across a large serving platter.

Scatter 2 wedged plum tomatoes, 1/2 thinly sliced white onion, 8 spears drained canned white asparagus spears, and 1/2 cup stuffed green olives over the greens.

Top with 2 cans drained canned tuna in olive oil and arrange the quartered 2 large eggs around the edges.

Drizzle with 3 tbsp extra-virgin olive oil and 1 tbsp sherry vinegar, then sprinkle with 1/2 tsp salt.
