  • 1 cup canned young coconut flesh (or fresh), sliced
  • 1 cup canned jackfruit in syrup, drained, sliced
  • 1 cup canned grass jelly (cincau), cubed
  • 1 cup full-fat coconut milk
  • 1/4 cup sweetened condensed coconut milk
  • 4 cups shaved ice or crushed ice
  • 1/2 tsp pandan extract (or 1 tsp vanilla)
  • 1/8 tsp salt

Instructions

    In a bowl, whisk together 1 cup full-fat coconut milk, 1/4 cup sweetened condensed coconut milk, 1/2 tsp pandan extract (or 1 tsp vanilla), and 1/8 tsp salt until smooth. Taste and adjust sweetness. Refrigerate until cold.

    Prepare 2 diced ripe avocado, 1 cup sliced canned young coconut flesh (or fresh), 1 cup drained, sliced canned jackfruit in syrup, and 1 cup cubed canned grass jelly (cincau) and keep refrigerated until ready to serve.

    Fill each serving glass with a generous mound of 4 cups shaved ice or crushed ice.
