Gulai Telur
Spiced egg curry with turmeric, galangal, and coconut milk. Creamy, aromatic, and deeply comforting. A vegetarian staple of Indonesian cooking.
Ingredients
- 8 large eggs, hard boiled, peeled and halved
- 1 onions, diced
- 6 garlic cloves, minced
- 2 tbsp fresh ginger, minced
- 1 tsp ground turmeric
- 1/2 tsp ground cumin
- 1/2 tsp ground coriander
- 2 tbsp galangal paste
- 2 cups coconut milk
- 1 cup vegetable broth
- 2 lemongrass stalks, bruised
- 4 kaffir lime leaves
- 1/2 tsp sea salt
- 2 tsp palm sugar

In a large pot, heat 2 tbsp coconut oil over medium heat. Add 1 diced onions, 6 minced garlic cloves, and 2 tbsp minced fresh ginger. Sauté until softened and fragrant, about 3-4 minutes.

Stir in 1 tsp ground turmeric, 1/2 tsp ground cumin, 1/2 tsp ground coriander, and 2 tbsp galangal paste. Cook for 1 minute to bloom the spices.

Pour in 2 cups coconut milk and 1 cup vegetable broth. Add 2 bruised lemongrass stalks and 4 kaffir lime leaves. Bring to a simmer.

Gently add 8 peeled and halved large eggs, hard boiled to the simmering liquid. Season with 1/2 tsp sea salt and 2 tsp palm sugar.

Simmer for 10-12 minutes, stirring gently occasionally. The curry should be fragrant and rich.

Taste and adjust seasonings. Remove lemongrass stalks. Serve hot over steamed rice.
