Lapis Legit
A rich, fragrant Indonesian thousand-layer cake made with buttery egg batters and warm spekkoek spices.
Ingredients
- 2 cups unsalted butter, softened
- 1/2 cup sweetened condensed milk
- 20 egg yolks
- 1 cup granulated sugar
- 1 cup cake flour, sifted
- 1 tbsp spekkoek spice mix
- 1 tsp vanilla extract

Preheat oven to 350F (175C) and grease an 8-inch square baking pan with parchment paper.

Beat 2 cups softened unsalted butter and 1/2 cup sweetened condensed milk in a large bowl until pale and light.

In a separate bowl, whip 20 egg yolks and 1 cup granulated sugar until thick, pale, and fluffy.

Gently fold the butter mixture into the whipped yolks until thoroughly combined.

Fold in 1 cup sifted cake flour, 1 tbsp spekkoek spice mix, and 1 tsp vanilla extract to form a smooth batter.

Switch oven to broiler setting. Pour 1/4 cup batter into the pan and spread evenly.

Broil for 3 to 4 minutes until deep golden, then press gently with a cake leveler.

Repeat pouring, broiling, and pressing each layer until batter is fully used.

Bake final cake at 300F (150C) for 10 minutes to set completely.
