Escarole and Beans
A classic Italian-American broth dish combining tender leafy greens and creamy white beans in a garlicky broth. Perfect as a cozy starter or lightweight main course.
Ingredients
- 2 tbsp olive oil
- 4 garlic cloves, sliced
- 1/4 tsp red pepper flakes
- 1 head escarole, chopped
- 2 cans cannellini beans, drained
- 2 cups vegetable broth
- 1/2 tsp kosher salt

Heat 2 tbsp olive oil in a large pot over medium heat.

Add 4 sliced garlic cloves and 1/4 tsp red pepper flakes, cooking for 1 to 2 minutes until fragrant and lightly golden.

Stir in 1 head chopped escarole and 1/2 tsp kosher salt, cooking for 3 to 4 minutes until wilted.

Add 2 cans drained cannellini beans and 2 cups vegetable broth, bringing the mixture to a gentle simmer.
