Spinach Ohitashi
A classic Japanese side dish featuring blanched spinach steeped in a gentle savory dashi broth. Served chilled with a light garnish of shaved bonito flakes.
Ingredients
- 1 lb fresh spinach, trimmed
- 1 tsp salt
- 1 cup dashi stock
- 1.5 tbsp soy sauce
- 1 tbsp mirin
- 2 tbsp bonito flakes

Bring a large pot of water to a boil and stir in 1 tsp salt.

Blanch 1 lb trimmed fresh spinach for 30 seconds until wilted and bright green.

Transfer fresh spinach to an ice water bath, then squeeze out excess moisture gently.

Mix 1 cup dashi stock, 1.5 tbsp soy sauce, and 1 tbsp mirin in a medium bowl.

Cut fresh spinach into two-inch lengths and submerge into the dashi liquid.

Chill in the refrigerator for 15 minutes, then garnish with 2 tbsp bonito flakes before serving.
