Escovitch Fish Fingers
Crispy fried white fish strips topped with a tangy, spicy pickled vegetable sauce.
Ingredients
- 1 lb cod fillets, sliced
- 1/2 cup all-purpose flour
- 1 tsp Jamaican curry powder
- 1/4 cup vegetable oil
- 1 red bell pepper, julienned
- 1 yellow onion, thinly sliced
- 1 carrot, julienned
- 1 Scotch bonnet pepper, minced
- 1/2 cup white vinegar
- 6 whole allspice berries

Mix 1/2 cup all-purpose flour and 1 tsp Jamaican curry powder in a shallow dish.

Dredge 1 lb sliced cod fillets in the curry flour mixture until fully coated.

Heat 1/4 cup vegetable oil in a skillet over medium-high heat.

Fry 1 lb sliced cod fillets for 3 to 4 minutes per side until golden brown and internal temperature reaches 145 degrees F.

Remove fish from skillet and add 1 thinly sliced yellow onion, 1 julienned red bell pepper, 1 julienned carrot, and 1 minced Scotch bonnet pepper to the remaining oil.

Sauté vegetables for 2 minutes, then stir in 1/2 cup white vinegar and 6 whole allspice berries.

Simmer pickle mixture for 3 minutes, then spoon over fried 1 lb sliced cod fillets.
