Fish Soup
A traditional Caribbean broth simmered with tender fish, yellow yam, pumpkin, and Scotch bonnet pepper.
Ingredients
- 1 lb red snapper fillets, chunked
- 6 cups fish stock
- 1 cup calabaza pumpkin, cubed
- 1 cup yellow yam, cubed
- 4 scallions, chopped
- 4 fresh thyme sprigs
- 1 Scotch bonnet pepper, whole
- 6 whole allspice berries, crushed
- 2 garlic cloves, minced
- 2 tbsp lime juice

Bring 6 cups fish stock to a simmer in a large pot over medium-high heat.

Add 1 cup cubed calabaza pumpkin, 1 cup cubed yellow yam, 4 chopped scallions, 2 minced garlic cloves, 6 crushed whole allspice berries, 4 fresh thyme sprigs, and 1 whole Scotch bonnet pepper.

Simmer for 20 minutes until the root vegetables are fork tender.

Stir in 1 lb chunked red snapper fillets and cook for 8 to 10 minutes until fish reaches an internal temperature of 145 degrees F.

Remove from heat, stir in 2 tbsp lime juice, and remove fresh thyme sprigs and Scotch bonnet pepper before serving.
