Fried Sweet Plantains
Caramelized sweet plantain slices pan-fried until golden and tender. Use fully ripe, black-skinned plantains for the best sweetness.
Ingredients
- 2 ripe plantains (skin mostly black), peeled, sliced
- 1/4 cup vegetable oil
- 1/4 tsp flaky sea salt

Peel 2 ripe plantains (skin mostly black) and cut on the diagonal into 1/2-inch thick slices.

Heat 1/4 cup vegetable oil in a large skillet over medium heat. When the oil shimmers, add the plantain slices in a single layer without crowding.

Cook 2 to 3 minutes per side until deep golden brown and caramelized. The plantains will soften and the edges should be lightly crisped.

Transfer to paper towels. Sprinkle lightly with 1/4 tsp flaky sea salt and serve immediately.
