Ginisang Munggo
A comforting stew made with tender mung beans, browned pork belly, tomatoes, and spinach in a savory broth.
Ingredients
- 1 cup dried mung beans, rinsed
- 5 cups water
- 1 tbsp cooking oil
- 1/2 lb pork belly, sliced
- 4 garlic cloves, minced
- 1 medium yellow onion, diced
- 2 medium Roma tomatoes, diced
- 2 tbsp fish sauce
- 3 cups fresh spinach, washed

In a large pot, simmer 1 cup rinsed dried mung beans in 5 cups water for 30 minutes until soft.

Heat 1 tbsp cooking oil in a skillet over medium heat, add 1/2 lb sliced pork belly, and render until browned and cooked to an internal temperature of 145°F.

Add 4 minced garlic cloves, 1 medium diced yellow onion, and 2 medium diced Roma tomatoes to the skillet, sautéing for 3 minutes until softened.

Transfer the sautéed mixture and 2 tbsp fish sauce into the pot with cooked mung beans, simmering for 10 minutes.

Stir in 3 cups washed fresh spinach and remove from heat, allowing greens to wilt before serving.
