Grilled Banana Boats with Chocolate
Whole bananas split and filled with chocolate chips and mini marshmallows, then grilled in their skins until gooey and caramelized. A campfire-inspired dessert that takes just minutes.
Ingredients
- 4 ripe but firm bananas, unpeeled
- 1/2 cup semi-sweet chocolate chips
- 1/2 cup mini marshmallows
- 1/4 cup peanut butter chips (optional)
- 2 tbsp brown sugar
- 1/2 tsp ground cinnamon
- 2 cups vanilla ice cream (for serving)

Preheat grill to medium heat (about 350°F). Tear off sheets of aluminum foil large enough to wrap each banana.

Without peeling 4 unpeeled ripe but firm bananas, cut a lengthwise slit through the peel and into the flesh, stopping about 1/2 inch from each end. Do not cut all the way through.

Gently open each slit with your fingers to create a pocket. Sprinkle 2 tbsp brown sugar and 1/2 tsp ground cinnamon inside each pocket.

Fill each banana pocket with 1/2 cup semi-sweet chocolate chips, 1/2 cup mini marshmallows, and 1/4 cup peanut butter chips (optional) if using, packing them in generously.

Wrap each filled banana tightly in aluminum foil, sealing the ends well to trap steam.

Place the foil-wrapped bananas on the grill and cook for 8-10 minutes, until the banana is soft and the fillings are melted. You can also set them on indirect heat for 12-15 minutes for a more gradual melt.

Remove from grill carefully — they will be very hot. Open the foil packets and serve the bananas directly in their skins with a scoop of 2 cups vanilla ice cream (for serving).
