Penicillin Cocktail
A modern scotch classic with honey-ginger syrup and a smoky Islay whisky float, creating a perfect balance of sweet, spicy, and peaty flavors.
Ingredients
- 2 oz blended scotch whisky
- 1/2 oz Islay single malt scotch
- 3/4 oz fresh lemon juice
- 3/8 oz honey syrup (equal parts honey and hot water)
- 3/8 oz ginger syrup
- as needed ice cubes
- 1 piece candied ginger (for garnish)

Fill a cocktail shaker with as needed ice cubes.

Add 2 oz blended scotch whisky, 3/4 oz fresh lemon juice, 3/8 oz honey syrup (equal parts honey and hot water), and 3/8 oz ginger syrup to the shaker.

Shake vigorously for 15 seconds until well-chilled.

Strain into a rocks glass filled with fresh ice.

Carefully pour the 1/2 oz Islay single malt scotch over the back of a spoon to float it on top of the drink.

Garnish with 1 piece candied ginger (for garnish).
