Habichuelas con Dulce
A sweet, creamy Dominican Lenten dessert made from pureed red beans, coconut milk, warm spices, and tender sweet potatoes. Serves warm or chilled topped with small milk cookies.
Ingredients
- 2 cans canned red kidney beans, drained
- 2 cups evaporated milk
- 1 cup coconut milk
- 1/2 cup granulated sugar
- 1 cup sweet potato, diced
- 1/4 cup raisins
- 2 cinnamon sticks
- 4 whole cloves
- 1/2 tsp salt
- 12 crisp milk cookies

Blend 2 cans drained canned red kidney beans with 2 cups evaporated milk until smooth, then strain the mixture into a large pot.

Stir in 1 cup coconut milk, 1/2 cup granulated sugar, 2 cinnamon sticks, 4 whole cloves, and 1/2 tsp salt.

Bring the pot to a simmer over medium heat, stirring occasionally for 10 minutes.

Add 1 cup diced sweet potato and simmer for 15 minutes until tender.

Add 1/4 cup raisins and cook for another 5 minutes until thickened, then remove cinnamon and cloves.

Serve warm or chilled, garnished with 12 crisp milk cookies.
