Habichuelas Guisadas
Tender red beans stewed in a savory tomato sauce with peppers and spices, a traditional Dominican trending side dish that is hearty and flavorful.
Ingredients
- 2 cans canned red beans (15 oz can), drained, rinsed
- 2 tbsp olive oil
- 1/2 yellow onion, diced
- 2 cloves garlic, minced
- 1/2 red bell pepper, diced
- 1 can tomato sauce (8 oz can)
- 1 tbsp tomato paste
- 2 tbsp green olives (pitted), chopped
- 1/4 tsp ground cumin
- 1/4 tsp dried oregano
- 1/4 tsp salt
- 1/8 tsp black pepper
- 1/2 cup water

Heat 2 tbsp olive oil in a large pot over medium heat.

Add 1/2 diced yellow onion and 2 cloves minced garlic. Cook 2-3 minutes until softened.

Add 1/2 diced red bell pepper and cook 2-3 minutes more.

Stir in 1 tbsp tomato paste, 1/4 tsp ground cumin, and 1/4 tsp dried oregano. Cook 1 minute until fragrant.

Add 2 cans drained, rinsed canned red beans (15 oz can), 1 can tomato sauce (8 oz can), and 1/2 cup water.

Bring to a simmer and cook 15-20 minutes, stirring occasionally, until canned red beans (15 oz can) are tender and sauce thickens.

Fold in 2 tbsp chopped green olives (pitted). Season with 1/4 tsp salt and 1/8 tsp black pepper.

Taste and adjust seasonings. Serve hot as a side dish with rice and a main course.
