Marry Me Chicken
Seared chicken breasts simmered in a creamy sun-dried tomato and parmesan sauce, the perennial viral skillet dinner people swear will get you a proposal.
Ingredients
- 2 lbs boneless skinless chicken breasts, pounded even
- 1 tsp salt
- 1/2 tsp black pepper, cracked
- 1/4 cup all-purpose flour
- 2 tbsp olive oil
- 4 cloves garlic, minced
- 1 cup chicken broth
- 1 cup heavy cream
- 1/2 cup sun-dried tomatoes, chopped
- 1/2 cup parmesan cheese, grated
- 1 tsp dried Italian seasoning
- 1/2 tsp red pepper flakes
- 4 leaves fresh basil, torn

Season the 2 lbs pounded even boneless skinless chicken breasts on both sides with 1 tsp salt and 1/2 tsp cracked black pepper, then dust lightly with 1/4 cup all-purpose flour, shaking off any excess.

Heat 2 tbsp olive oil in a large skillet over medium-high heat. Add the chicken and sear for 5 to 6 minutes per side, until golden brown and cooked through to an internal temperature of 165F. Transfer to a plate and tent with foil.

Lower the heat to medium, add 4 cloves minced garlic to the skillet, and cook for 30 seconds until fragrant.

Pour in 1 cup chicken broth, scraping up any browned bits from the bottom of the pan.

Stir in 1 cup heavy cream, 1/2 cup chopped sun-dried tomatoes, 1 tsp dried Italian seasoning, and 1/2 tsp red pepper flakes. Simmer for 3 to 4 minutes until slightly thickened.

Whisk in 1/2 cup grated parmesan cheese until melted and the sauce is smooth.

Return the chicken and any accumulated juices to the skillet, spooning sauce over the top. Simmer for 2 more minutes to warm through.

Scatter 4 leaves torn fresh basil over the top and serve the chicken with the sauce spooned generously over each piece.
