Harissa Stew
Fragrant spiced meat stew built on harissa paste, tomatoes, and warming spices. A soul-warming Tunisian classic that grows deeper in flavor as it simmers.
Ingredients
- 1.5 lbs beef chuck, cubed
- 2 tbsp olive oil
- 1/2 onion, sliced
- 2 cloves garlic, minced
- 2 tbsp harissa paste
- 1 lg can canned crushed tomatoes
- 2 cups beef broth
- 1/2 tsp caraway seeds
- 1/2 tsp salt
- 1/4 tsp black pepper

Heat 2 tbsp olive oil in a large pot over medium-high heat.

Add 1.5 lbs cubed beef chuck in batches and brown on all sides, about 5 minutes. Set aside.

In the same pot, cook 1/2 sliced onion until softened, about 3 minutes.

Add 2 cloves minced garlic and cook for 30 seconds.

Stir in 2 tbsp harissa paste and cook for 1 minute, stirring constantly.

Return beef to the pot. Add 1 lg can canned crushed tomatoes, 2 cups beef broth, 1/2 tsp caraway seeds, 1/2 tsp salt, and 1/4 tsp black pepper.

Bring to a boil, then reduce heat and simmer covered for 40 minutes, stirring occasionally, until beef is tender.

Serve hot with bread for dipping.
