Loco Moco
A classic Hawaiian plate of white rice topped with a seasoned beef patty, fried egg, and savory brown mushroom gravy — a hearty high-protein breakfast that keeps you fueled all morning.
Ingredients
- 1.5 lbs ground beef (80/20)
- 2 cups dry long-grain white rice, cooked
- 4 large eggs
- 8 oz cremini mushrooms, sliced
- 2 cups low-sodium beef broth
- 2 tbsp soy sauce
- 2 tsp Worcestershire sauce
- 2 tbsp cornstarch
- 1/4 cup cold water (for slurry)
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1 tsp salt
- 1/2 tsp black pepper, freshly ground
- 2 tbsp neutral oil (canola or vegetable)
- 2 tbsp unsalted butter
- 2 stalks green onions, sliced

Cook 2 cups dry dry long-grain white rice according to package directions. Keep warm.

In a large bowl, combine 1.5 lbs ground beef (80/20), 1/2 tsp garlic powder, 1/2 tsp onion powder, half the 1 tsp salt, and half the 1/2 tsp freshly ground black pepper. Mix gently and form into patties (one per serving). Do not overwork the meat.

Heat half the 2 tbsp neutral oil (canola or vegetable) in a large skillet over medium-high heat. Cook patties until internal temperature reaches 160°F (71°C), about 4 minutes per side. Transfer to a plate and tent with foil.

In the same skillet, melt 2 tbsp unsalted butter over medium heat. Add 8 oz sliced cremini mushrooms and cook until browned, about 4 minutes. Pour in 2 cups low-sodium beef broth, 2 tbsp soy sauce, and 2 tsp Worcestershire sauce. Bring to a simmer.

Whisk together 2 tbsp cornstarch and 1/4 cup cold water (for slurry) until smooth. Stir the slurry into the simmering gravy and cook, stirring, until thickened, about 2 minutes. Season with remaining salt and black pepper.

In a separate non-stick pan, heat remaining neutral oil (canola or vegetable) over medium heat. Fry 4 large eggs sunny-side up until whites are set but yolks are still runny.

To assemble: mound long-grain white rice in each bowl, top with a beef patty, pour mushroom gravy over, add a fried egg, and garnish with 2 stalks sliced green onions.
