Pineapple Fried Rice
Golden fried rice loaded with pineapple chunks, shrimp, cashews, and a touch of curry spice. Served in a hollowed pineapple half for an impressive presentation.
Ingredients
- 4 cups cooked white rice (cooled)
- 2 cups fresh pineapple (cut into chunks)
- 1 lb large shrimp (peeled and deveined)
- 0.5 cup roasted cashews
- 1 cup frozen peas
- 1 cup diced carrots, diced
- 4 tbsp vegetable oil
- 3 tbsp soy sauce
- 1 tsp curry powder
- 4 garlic cloves, minced
- 4 green onions, chopped

Heat 4 tbsp vegetable oil in a large skillet or wok over medium-high heat. Add 4 minced garlic cloves and stir for 30 seconds until fragrant.

Add 1 lb large shrimp (peeled and deveined) and cook for 2 to 3 minutes per side until pink and fully cooked through (internal temperature 145°F). Remove and set aside.

Add 1 cup diced diced carrots and 1 cup frozen peas to the pan. Stir-fry for 2 to 3 minutes.

Add the cooled 4 cups cooked white rice (cooled) and break up any clumps. Stir-fry for 3 to 4 minutes.

Add 3 tbsp soy sauce and 1 tsp curry powder. Mix well to coat the rice.

Return shrimp to the pan. Add 2 cups fresh pineapple (cut into chunks) and 0.5 cup roasted cashews. Toss everything together for 2 minutes.

Remove from heat and garnish with 4 chopped green onions.

Serve immediately in bowls or inside hollowed pineapple halves if desired.
