Herring Under a Fur Coat
A classic layered Russian salad featuring salted herring, root vegetables, hard-boiled eggs, and mayonnaise. It is known for its distinctive bright purple top layer and rich, savory taste.
Ingredients
- 8 oz salted herring fillets, diced
- 2 medium russet potatoes
- 2 medium carrots
- 2 medium red beets
- 3 large eggs, hard-boiled
- 1 small yellow onion, finely diced
- 1 cup mayonnaise

Boil 2 medium russet potatoes, 2 medium carrots, and 2 medium red beets in separate pots until tender, then cool completely, peel, and grate.

Spread 8 oz diced salted herring fillets on a platter and top with 1 small finely diced yellow onion.

Spread a thin layer of 1 cup mayonnaise over the onion.

Layer the russet potatoes on top and spread with mayonnaise.

Add layers of carrots and grated 3 large hard-boiled eggs, spreading mayonnaise between layers.
