Kholodets
A traditional jellied meat dish slow simmered from rich bones and seasoned with garlic. Served cold as a savory centerpiece for holiday meals.
Ingredients
- 2 lbs pork trotters, halved
- 2 lbs beef shank, cubed
- 4 qts cold water
- 1 yellow onion, peeled
- 1 carrot, peeled
- 2 bay leaves
- 10 whole black peppercorns
- 2 tsp fine sea salt
- 6 garlic cloves, minced

Place 2 lbs halved pork trotters and 2 lbs cubed beef shank into a large stockpot, cover with 4 qts cold water, and bring to a boil.

Skim off any foam, reduce heat to low, and stir in 1 peeled yellow onion, 1 peeled carrot, 2 bay leaves, 10 whole black peppercorns, and 2 tsp fine sea salt.

Simmer uncovered for 6 hours until meat falls off the bone and reaches an internal temperature of at least 195°F.

Strain broth, discard bones and vegetables, shred the meat into serving dishes, fold in 6 minced garlic cloves, pour broth over top, and chill until set.
