Homemade Lapsha Soup
A comforting chicken noodle soup made with rich broth, tender shredded chicken, and egg noodles. Fresh dill adds a fragrant finish to this traditional recipe.
Ingredients
- 2 lbs bone-in chicken thighs, trimmed
- 8 cups water
- 1 yellow onion, halved
- 2 carrots, thinly sliced
- 2 bay leaves
- 2 tsp salt
- 1/2 tsp black pepper
- 4 oz egg noodles
- 1/4 cup fresh dill, chopped

Combine 2 lbs trimmed bone-in chicken thighs, 8 cups water, 1 halved yellow onion, and 2 bay leaves in a large pot over high heat.

Bring to a boil, then skim off any surface foam that forms.

Reduce heat to low, cover, and simmer for 35 minutes until chicken reaches an internal temperature of 165°F.

Transfer bone-in chicken thighs to a cutting board and discard yellow onion and bay leaves.

Shred chicken meat from bones, discarding skin and bones, then return meat to the pot.

Stir in 2 thinly sliced carrots, 2 tsp salt, and 1/2 tsp black pepper, simmering for 8 minutes until carrots soften.

Add 4 oz egg noodles and cook for 5 minutes until tender.

Remove pot from heat, stir in 1/4 cup chopped fresh dill, and serve immediately.
