Hot Brown
An open-faced turkey sandwich smothered in a rich Pecorino Mornay sauce, topped with fresh sliced tomatoes and crispy bacon, then broiled until bubbly.
Ingredients
- 4 slices white bread, toasted
- 1 lb roasted turkey breast, thickly sliced
- 4 strips bacon, cooked
- 2 Roma tomato, sliced
- 2 tbsp unsalted butter
- 2 tbsp all-purpose flour
- 1.5 cups heavy cream
- 1/2 cup Pecorino Romano cheese, grated
- 1 pinch ground nutmeg
- 1/4 tsp paprika

Melt 2 tbsp unsalted butter in a saucepan over medium heat, then whisk in 2 tbsp all-purpose flour and cook for 2 minutes.

Slowly whisk in 1.5 cups heavy cream and simmer until thickened, about 4 to 5 minutes.

Remove sauce from heat and stir in 1/2 cup grated Pecorino Romano cheese, 1 pinch ground nutmeg, and 1/4 tsp paprika until smooth.

Place 4 slices toasted white bread slices in an oven-safe dish and layer with 1 lb thickly sliced roasted turkey breast, ensuring turkey reaches an internal temperature of 165 degrees F when warmed.
