Lablabi
A hearty North African chickpea soup made with garlic, cumin, harissa, and lemon juice poured over crusty stale bread.
Ingredients
- 2 cans canned chickpeas, drained
- 4 cups water
- 4 garlic cloves, minced
- 2 tsp ground cumin
- 1 tsp salt
- 4 cups stale crusty bread, torn
- 2 tbsp harissa paste
- 1/4 cup extra-virgin olive oil
- 2 tbsp lemon juice

Combine 2 cans drained canned chickpeas, 4 cups water, 4 minced garlic cloves, 2 tsp ground cumin, and 1 tsp salt in a pot.

Bring to a boil, then reduce heat to low and simmer for 15 minutes.

Divide 4 cups torn stale crusty bread evenly into serving bowls.

Ladle the hot broth and chickpeas into each prepared bowl.

Drizzle with 2 tbsp harissa paste, 1/4 cup extra-virgin olive oil, and 2 tbsp lemon juice before serving.
