Maakouda
Crispy potato fritters spiced with cumin, garlic, and herbs. Golden on the outside and soft inside, they are a beloved North African snack.
Ingredients
- 2 lbs Yukon Gold potatoes, mashed
- 4 garlic cloves, minced
- 1/4 cup fresh flat-leaf parsley, chopped
- 1 tsp ground cumin
- 1/2 tsp ground turmeric
- 1 tsp salt
- 2 large eggs, beaten
- 1/4 cup all-purpose flour
- 1/2 cup vegetable oil

Boil peeled potatoes until tender, drain thoroughly, and mash in a large bowl.

Mix in 4 minced garlic cloves, 1/4 cup chopped fresh flat-leaf parsley, 1 tsp ground cumin, 1/2 tsp ground turmeric, 1 tsp salt, and 2 beaten large eggs until smooth.

Shape the potato mixture into small round patties and dredge lightly in 1/4 cup all-purpose flour.

Heat 1/2 cup vegetable oil in a skillet over medium-high heat.

Fry patties for 3 to 4 minutes per side until deep golden and crisp, then drain on paper towels.
