Lamb Merga Stew
A slow-simmered North African stew with tender lamb, carrots, potatoes, and warm aromatic spices.
Ingredients
- 2 tbsp olive oil
- 1.5 lbs boneless lamb shoulder, cubed
- 1 yellow onion, chopped
- 4 garlic cloves, minced
- 2 tbsp tomato paste
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp ground turmeric
- 1 tsp salt
- 3 cups beef broth
- 2 russet potatoes, cubed
- 2 carrots, sliced
- 1 cup frozen peas

Heat 2 tbsp olive oil in a large pot over medium-high heat.

Add 1.5 lbs cubed boneless lamb shoulder and brown on all sides for 8 minutes, ensuring internal temperature reaches at least 145 degrees F.

Add 1 chopped yellow onion and 4 minced garlic cloves, cooking for 4 minutes until softened.

Stir in 2 tbsp tomato paste, 1 tsp ground cumin, 1 tsp ground coriander, 1/2 tsp ground turmeric, and 1 tsp salt until fragrant, about 1 minute.

Pour in 3 cups beef broth, add 2 cubed russet potatoes and 2 sliced carrots, then bring to a boil.

Reduce heat to low, cover, and simmer for 30 minutes until vegetables and lamb are tender.
