Ingredients

  • 4 oz brewed espresso or strong brewed coffee, cooled
  • 1 cup whole milk or oat milk
  • 1/4 cup honey
  • 1/4 cup water (for syrup)
  • 2 tsp culinary dried lavender buds
  • 2 cups ice cubes

Instructions

  1. 1

Make the lavender honey syrup. Combine 1/4 cup honey, 1/4 cup water (for syrup), and 2 tsp culinary dried lavender buds in a small saucepan over medium heat. Stir gently until honey dissolves, then let the mixture come to a gentle simmer for 2 minutes. Remove from heat and let steep for 10 minutes.

  2. 2

Strain the syrup through a fine-mesh sieve into a small jar or bowl, pressing the lavender to extract flavor. Discard the lavender buds. Let the syrup cool to room temperature.

  3. 3

Fill each glass with 2 cups ice cubes. Pour the cooled 4 oz brewed espresso or strong brewed coffee, cooled evenly over the ice.

  4. 4

Add 1 to 2 tablespoons of the lavender honey syrup to each glass and stir to combine.

  5. 5

Pour 1 cup whole milk or oat milk over the top. Stir gently and taste, adding more syrup if desired. Serve immediately.
