Shoofly Pie
A traditional dessert featuring a rich dark molasses filling topped with sweet spiced crumbs. It bakes into a soft gooey bottom layer with a light cake-like crumb top.
Ingredients
- 1 unbaked pie crust
- 1.5 cups all-purpose flour
- 1/2 cup dark brown sugar
- 1/2 tsp ground cinnamon
- 1/4 tsp salt
- 1/4 cup unsalted butter, cubed
- 1 cup dark molasses
- 1 large egg, beaten
- 1 tsp baking soda
- 3/4 cup boiling water

Preheat oven to 375 degrees F and fit 1 unbaked pie crust into a 9-inch pie dish.

In a bowl combine 1.5 cups all-purpose flour, 1/2 cup dark brown sugar, 1/2 tsp ground cinnamon, and 1/4 tsp salt, then cut in 1/4 cup cubed unsalted butter until crumbly.

In a separate bowl whisk 1 cup dark molasses, 1 beaten large egg, 1 tsp baking soda, and 3/4 cup boiling water until smooth.

Pour liquid mixture into pie crust and top evenly with crumb mixture.

Bake for 35 to 40 minutes until set, then cool completely before serving.
