Lemon Ice Box Pie
A chilled classic featuring a creamy, tart lemon filling set inside a buttery graham cracker crust.
Ingredients
- 1.5 cups graham cracker crumbs
- 6 tbsp unsalted butter, melted
- 3 tbsp granulated sugar
- 4 egg yolks, beaten
- 14 oz can sweetened condensed milk
- 1/2 cup fresh lemon juice
- 1 tbsp lemon zest, finely grated
- 1 cup heavy whipped cream, whipped

Preheat oven to 350 degrees F.

In a bowl, mix 1.5 cups graham cracker crumbs, 6 tbsp melted unsalted butter, and 3 tbsp granulated sugar until combined.

Press the mixture firmly into a 9-inch pie dish and bake for 8 minutes, then set aside to cool.

In a medium bowl, whisk together 4 beaten egg yolks, 14 oz can sweetened condensed milk, 1/2 cup fresh lemon juice, and 1 tbsp finely grated lemon zest until smooth.

Pour the lemon filling into the cooled pie crust and bake for 10 minutes until set around the edges.

Cool completely at room temperature, then freeze or chill in the refrigerator for at least 4 hours.
