Loaded Waffle Fries
Restaurant-style crispy waffle fries piled high with melted cheese, bacon, sour cream, and green onions for an indulgent side dish.
Ingredients
- 2 lbs russet potatoes, cut into waffle fries
- 4 cups vegetable oil (for frying)
- 1 tsp salt
- 1/4 tsp black pepper
- 1 cup sharp cheddar cheese (shredded)
- 4 slices bacon (cooked and crumbled)
- 1/2 cup sour cream
- 4 tbsp green onions, sliced

Cut 2 lbs russet potatoes cut into waffle fries using a waffle fry cutter. Place in a bowl of cold water to soak for at least 30 minutes to remove excess starch.

Heat 4 cups vegetable oil (for frying) to 375°F (190°C) in a deep skillet, Dutch oven, or deep fryer.

Pat potatoes dry thoroughly with paper towels.

Working in batches to avoid crowding, fry potatoes for 3-4 minutes until golden and crispy. Do not overcrowd the oil.

Remove potatoes with a slotted spoon and drain on paper towels. Season immediately with 1 tsp salt and 1/4 tsp black pepper.

Transfer the crispy potatoes to a serving platter or baking sheet.

Sprinkle 1 cup sharp cheddar cheese (shredded) evenly over the hot potatoes while they are still hot, allowing the cheese to melt.

Top with 4 slices bacon (cooked and crumbled), dollops of 1/2 cup sour cream, and 4 tbsp sliced green onions.
