Lemon Ice
A classic frozen dessert made with freshly squeezed lemon juice and simple syrup. Scraped during freezing, it creates a light, granular ice texture with bright citrus flavor.
Ingredients
- 2 cups water
- 3/4 cup granulated sugar
- 3/4 cup lemon juice, squeezed
- 1 tbsp lemon zest, grated

Combine 2 cups water and 3/4 cup granulated sugar in a saucepan over medium heat.

Stir until sugar dissolves completely, then cool the syrup to room temperature.

Whisk in 3/4 cup squeezed lemon juice and 1 tbsp grated lemon zest.

Pour into a shallow baking dish and freeze for 3 hours, scraping with a fork every 30 minutes.
