Liptauer Cheese Spread
A classic Hungarian and Austrian cheese spread made with cottage cheese or cream cheese blended with paprika, caraway seeds, and capers for a tangy, boldly flavored dip. Serve on rye crackers or dark bread as an appetizer.
Ingredients
- 8 oz cream cheese, softened
- 1/2 cup small-curd cottage cheese
- 4 tbsp unsalted butter, softened
- 2 tsp sweet Hungarian paprika
- 1 tsp caraway seeds
- 2 tbsp capers, drained, chopped
- 1 tsp Dijon mustard
- 4 green onions (scallions), finely sliced
- to taste salt
- to taste black pepper, freshly ground
- as needed rye crackers or dark bread

In a medium bowl, beat 8 oz softened cream cheese and 4 tbsp softened unsalted butter together until smooth and fluffy, about 2 minutes with a hand mixer or vigorously by hand.

Add 1/2 cup small-curd cottage cheese and mix until well incorporated.

Stir in 2 tsp sweet Hungarian paprika, 1 tsp caraway seeds, 2 tbsp drained, chopped capers, 1 tsp Dijon mustard, and 4 finely sliced green onions (scallions).

Season with salt and freshly ground black pepper to taste.

Transfer to a serving bowl, smooth the top, and dust with a little extra paprika. Refrigerate for at least 30 minutes to let the flavors meld.
