Ingredients

  • 1/2 cup small-curd cottage cheese
  • 4 tbsp unsalted butter, softened
  • 2 tsp sweet Hungarian paprika
  • 1 tsp caraway seeds
  • 2 tbsp capers, drained, chopped
  • 1 tsp Dijon mustard
  • 4 green onions (scallions), finely sliced

  • to taste black pepper, freshly ground
  • as needed rye crackers or dark bread

Instructions

    In a medium bowl, beat 8 oz softened cream cheese and 4 tbsp softened unsalted butter together until smooth and fluffy, about 2 minutes with a hand mixer or vigorously by hand.

    Add 1/2 cup small-curd cottage cheese and mix until well incorporated.

    Stir in 2 tsp sweet Hungarian paprika, 1 tsp caraway seeds, 2 tbsp drained, chopped capers, 1 tsp Dijon mustard, and 4 finely sliced green onions (scallions).

    Season with salt and freshly ground black pepper to taste.

    Transfer to a serving bowl, smooth the top, and dust with a little extra paprika. Refrigerate for at least 30 minutes to let the flavors meld.
