Maftoul Salad
Fluffy pearl couscous tossed with fresh mint, parsley, cherry tomatoes, and a bright lemon dressing. This light and refreshing Lebanese side dish is perfect alongside grilled meats.
Ingredients
- 2 cups pearl couscous (maftoul)
- 2 cups vegetable broth
- 1.5 cups cherry tomatoes, halved
- 0.5 cup fresh parsley, finely chopped
- 3 tbsp fresh mint, finely chopped
- 1 cup cucumber, finely diced
- 0.5 cup red onion, finely diced
- 3 tbsp fresh lemon juice
- 3 tbsp extra-virgin olive oil
- 0.5 tsp salt
- 0.25 tsp black pepper

In a pot, bring 2 cups vegetable broth to a boil.

Stir in 2 cups pearl couscous (maftoul).

Reduce heat to low and simmer for 9-10 minutes until couscous is tender and liquid is absorbed.

Remove from heat and fluff with a fork. Let cool slightly.

In a large bowl, combine cooled couscous, 1.5 cups halved cherry tomatoes, 0.5 cup finely chopped fresh parsley, 3 tbsp finely chopped fresh mint, 1 cup finely diced cucumber, and 0.5 cup finely diced red onion.

In a small bowl, whisk together 3 tbsp fresh lemon juice, 3 tbsp extra-virgin olive oil, 0.5 tsp salt, and 0.25 tsp black pepper.

Pour dressing over couscous mixture and toss gently to combine.
