Poached Eggs in Yogurt
A classic Mediterranean dish of warm poached eggs served over garlic-infused Greek yogurt and drizzled with warm spiced butter.
Ingredients
- 2 cups Greek yogurt
- 2 cloves garlic, minced
- 1/2 tsp fine sea salt
- 1 tbsp distilled white vinegar
- 4 large eggs
- 3 tbsp unsalted butter
- 1 tsp Aleppo pepper flakes
- 2 tbsp fresh dill, chopped

In a bowl, mix 2 cups Greek yogurt, 2 cloves minced garlic, and 1/2 tsp fine sea salt until smooth, then spread evenly onto serving plates.

Bring a pot of water to a gentle simmer and stir in 1 tbsp distilled white vinegar.

Crack 4 large eggs into small cups and gently slide them into the simmering water.

Poach for 3 to 4 minutes until whites are set but yolks remain runny, then transfer with a slotted spoon onto the garlic yogurt.

Melt 3 tbsp unsalted butter in a small skillet over medium heat until foamy, then stir in 1 tsp Aleppo pepper flakes for 30 seconds.

Spoon the warm spiced butter over the eggs and garnish with 2 tbsp chopped fresh dill.
