Flaky diamond-shaped Maltese pastries filled with seasoned ricotta cheese.
Ingredients
- 2 cups all-purpose flour
- 1/2 tsp salt
- 2/3 cup warm water
- 1/2 cup unsalted butter, softened
- 1 1/2 cups ricotta cheese
- 1 egg, beaten
- 2 tbsp fresh parsley, chopped
- 1/4 tsp ground nutmeg
- 1/4 tsp black pepper

Preheat oven to 400F (200C) and line a baking sheet with parchment paper.

In a large bowl, mix 2 cups all-purpose flour, 1/2 tsp salt, and 2/3 cup warm water to form a soft dough.

Knead dough for 5 minutes, then roll into a thin rectangle and spread 1/2 cup softened unsalted butter evenly across the surface.

Roll dough tightly into a log, stretch and twist slightly, then cut into 12 equal rounds.

In a small bowl, combine 1 1/2 cups ricotta cheese, 1 beaten egg, 2 tbsp chopped fresh parsley, 1/4 tsp ground nutmeg, and 1/4 tsp black pepper.

Flatten each dough round with your thumbs, place filling in center, pinch edges to seal into diamond shapes, and place on prepared pan.

Bake for 20-25 minutes until golden brown and flaky.
