Crispy deep-fried young jackfruit bites coated in a light batter, a trendy Vietnamese street snack.
Ingredients
- 20 oz canned young green jackfruit in brine, drained, shredded into bite-sized pieces
- 1/2 cup cornstarch
- 1/2 cup rice flour
- 1/2 cup water
- 1/4 tsp salt
- 1/8 tsp white pepper
- 1/4 tsp garlic powder
- 3 cups vegetable oil for deep frying
- 1/4 cup chili sauce or sriracha
- 1 lime wedges

In a medium bowl, combine 1/2 cup cornstarch, 1/2 cup rice flour, 1/4 tsp salt, 1/8 tsp white pepper, and 1/4 tsp garlic powder.

Slowly whisk in 1/2 cup water until a smooth, pancake-batter-like consistency is reached.

Pat the 20 oz shredded into bite-sized pieces canned young green jackfruit in brine, drained pieces dry with paper towels to remove excess moisture.

Heat 3 cups vegetable oil for deep frying in a deep pot or wok to 350°F.

Working in batches, dip each canned young green jackfruit in brine, drained piece into the batter to coat completely.

Carefully place the coated pieces into the hot vegetable oil for deep frying.

Fry for 2-3 minutes, stirring occasionally, until light golden and crispy.

Remove with a slotted spoon and drain on paper towels.
