Paleo Mashed Cauliflower

Ingredients

  • 1 head cauliflower head, cut into florets
  • 4 cloves garlic cloves, peeled
  • 2 tbsp extra-virgin olive oil
  • 1 tsp kosher salt
  • 1/2 tsp black pepper, freshly ground
  • 2 tbsp fresh chives, thinly sliced
  • 1/4 cup vegetable broth (or water)

Instructions

    Bring a large pot of salted water to a boil. Add 1 head cut into florets cauliflower head and 4 cloves peeled garlic cloves. Cook for 12 to 15 minutes until both are very tender.

    Drain well, then return the cauliflower and garlic to the pot over low heat for 1 minute, stirring, to evaporate excess moisture.

    Transfer to a food processor or use an immersion blender. Add 2 tbsp extra-virgin olive oil, 1/4 cup vegetable broth (or water), 1 tsp kosher salt, and 1/2 tsp freshly ground black pepper.

    Blend or process until completely smooth and creamy. Add a splash more broth if needed to reach your desired consistency.

    Taste and adjust seasoning. Transfer to a serving bowl and top with 2 tbsp thinly sliced fresh chives and a drizzle of extra olive oil.
