Cubes of firm paneer and vegetables marinated in spiced yogurt and grilled until charred and smoky. A classic Indian appetizer that's hearty enough to anchor a vegetarian spread.

Ingredients

  • 1 lb firm paneer, 1-inch cubes
  • 2 bell pepper (any color), 1-inch pieces
  • 1 red onion, 1-inch pieces
  • 1/2 cup whole-milk plain yogurt
  • 2 tbsp fresh lemon juice
  • 2 tsp ginger-garlic paste
  • 1 tsp garam masala
  • 1/2 tsp ground cumin
  • 1/2 tsp ground coriander
  • 1 tsp Kashmiri chili powder (or mild paprika)
  • 1/4 tsp ground turmeric
  • 2 tbsp neutral oil (canola or vegetable)
  • 1 tsp salt
  • 1/2 tsp chaat masala (for serving)

Instructions

    In a large bowl, combine 1/2 cup whole-milk plain yogurt, 2 tbsp fresh lemon juice, 2 tsp ginger-garlic paste, 1 tsp garam masala, 1/2 tsp ground cumin, 1/2 tsp ground coriander, 1 tsp Kashmiri chili powder (or mild paprika), 1/4 tsp ground turmeric, 2 tbsp neutral oil (canola or vegetable), and 1 tsp salt. Whisk until smooth.

    Add 1 lb 1-inch cubes firm paneer, 2 1-inch pieces bell pepper (any color), and 1 1-inch pieces red onion to the marinade. Toss gently to coat every piece. Cover and refrigerate for at least 20 minutes (or up to 4 hours).

    Preheat your grill or grill pan to medium-high heat. Thread the marinated firm paneer, bell pepper (any color), and red onion alternately onto skewers.

    Grill the skewers for 3 to 4 minutes per side, turning once or twice, until the paneer is lightly charred and the vegetables are tender.

    Slide the skewers off and arrange on a platter. Sprinkle with 1/2 tsp chaat masala (for serving) and serve immediately with lemon wedges and mint chutney.
