Pepperoni Pizza Caesar Wrap
The viral mashup of Caesar salad and pizza: pepperoni, mozzarella, and dressed romaine rolled into a tortilla, then pan-toasted until crisp like a pizza crust.
Ingredients
- 4 large flour tortillas (10 inch)
- 4 cups romaine lettuce, chopped
- 1/4 cup caesar dressing
- 1/4 cup parmesan cheese, grated
- 1/4 cup pizza sauce
- 1/2 tsp italian seasoning
- 1/2 cup pepperoni slices, chopped
- 1/2 cup mozzarella cheese, shredded
- 2 tsp unsalted butter

In a large bowl, toss the 4 cups chopped romaine lettuce with the 1/4 cup caesar dressing and 1/4 cup grated parmesan cheese until evenly coated.

Lay out 4 large flour tortillas (10 inch) flat on a work surface and spread a thin layer of 1/4 cup pizza sauce over the surface, leaving a 1-inch border. Sprinkle with 1/2 tsp italian seasoning.

Scatter the 1/2 cup chopped pepperoni slices and 1/2 cup shredded mozzarella cheese evenly over the sauce.

Pile the dressed romaine mixture in a line across the center third of each tortilla.

Fold in the sides of the tortilla, then roll it up tightly from the bottom into a burrito shape.

Melt the 2 tsp unsalted butter in a large skillet over medium heat. Place each wrap seam-side down and press with a spatula. Toast, turning occasionally, until deep golden and crisp on all sides and the cheese has melted, about 2 to 3 minutes per side.
