Pera Huerfana
A traditional Peruvian dessert of tender pears poached in a warm spiced port syrup with raisins and pecans.
Ingredients
- 4 Bosc pears, peeled, cored
- 1 cup port wine
- 1 cup water
- 1/2 cup brown sugar
- 1 cinnamon stick
- 4 whole cloves
- 2 orange peel strip
- 1/4 cup raisins
- 1/4 cup pecans, chopped

In a medium saucepan, combine 1 cup port wine, 1 cup water, 1/2 cup brown sugar, 1 cinnamon stick, 4 whole cloves, and 2 orange peel strip over medium heat.

Stir until the sugar dissolves and bring the mixture to a gentle simmer.

Add 4 peeled, cored Bosc pears and 1/4 cup raisins to the pot, cover, and simmer for 20 minutes until the pears are tender.

Transfer pears to serving dishes, simmer the remaining syrup for 5 minutes to thicken, then pour over pears and garnish with 1/4 cup chopped pecans.
