Pfannkuchensuppe
A comforting German soup featuring savory pancake ribbons bathed in hot, rich beef broth.
Ingredients

- 1 cup whole milk
- 2 large eggs, beaten
- 1/4 tsp fine salt
- 1 tbsp unsalted butter
- 6 cups beef broth
- 2 tbsp fresh chives, chopped

Whisk together 1 cup all-purpose flour, 1 cup whole milk, 2 beaten large eggs, and 1/4 tsp fine salt in a bowl until smooth, then let rest for 10 minutes.

Melt a small portion of 1 tbsp unsalted butter in a skillet over medium heat, pour in a thin layer of batter, and cook for 1 to 2 minutes per side until lightly golden.

Repeat with remaining batter and butter, then roll up cooled pancakes tightly and slice crosswise into thin strips.

Bring 6 cups beef broth to a gentle simmer in a saucepan over medium-high heat.

Divide pancake strips into warm serving bowls, ladle hot broth over them, and garnish with 2 tbsp chopped fresh chives.
