Pumpkin Soup
A silky and warming German soup made with simmered Hokkaido pumpkin, fresh ginger, and a dash of nutmeg.
Ingredients
- 2 tbsp unsalted butter
- 1 medium yellow onion, diced
- 2 garlic cloves, minced
- 1 tbsp fresh ginger, grated
- 2 lbs Hokkaido pumpkin, cubed
- 4 cups vegetable broth
- 1/2 cup heavy cream
- 1/4 tsp ground nutmeg
- 1 tsp salt
- 1/4 tsp black pepper

Melt 2 tbsp unsalted butter in a large pot over medium heat.

Add 1 medium diced yellow onion, 2 minced garlic cloves, and 1 tbsp grated fresh ginger, cooking for 5 minutes until softened.

Stir in 2 lbs cubed Hokkaido pumpkin and cook for 3 minutes.

Pour in 4 cups vegetable broth, bring to a boil, then reduce heat to simmer for 15 minutes until pumpkin is tender.

Purée the mixture using a blender until completely smooth.

Stir in 1/2 cup heavy cream, 1/4 tsp ground nutmeg, 1 tsp salt, and 1/4 tsp black pepper, heating gently for 2 minutes before serving.
