Lilikoi Cheesecake
A creamy tropical cheesecake infused with tangy passion fruit (lilikoi) puree, topped with a glossy lilikoi glaze. Perfect Hawaiian dessert.
Ingredients
- 2 cups graham cracker crumbs
- 6 tbsp butter (melted)
- 1 lb cream cheese (softened)
- 1 cup sugar
- 4 eggs
- 0.5 cup sour cream
- 1 cup lilikoi puree (passion fruit, fresh or frozen)
- 1 tsp vanilla extract
- pinch salt
- 0.5 cup powdered sugar (for glaze)
- 0.5 cup lilikoi puree (for glaze)

Preheat oven to 325°F. Combine 2 cups graham cracker crumbs with 6 tbsp melted butter and press into the bottom of a 9-inch springform pan.

Bake crust for 8 minutes until lightly golden. Remove and let cool slightly.

Beat 1 lb cream cheese (softened) until smooth and creamy. Gradually add 1 cup sugar and mix until well combined.

Add 4 eggs one at a time, beating well after each addition.

Stir in 0.5 cup sour cream, 1 cup lilikoi puree (passion fruit, fresh or frozen), 1 tsp vanilla extract, and pinch salt.

Pour filling onto the crust and smooth the top.

Bake for 50 to 60 minutes until the center is almost set but still slightly jiggly. The internal temperature should be 150°F.

Remove from oven and cool completely before refrigerating for at least 4 hours or overnight.

For the glaze, whisk 0.5 cup powdered sugar (for glaze) with 0.5 cup lilikoi puree until smooth. Drizzle over the chilled cheesecake before serving.
