Roasted Tomato Burrata Dip
Cherry tomatoes roasted with garlic and chili flakes until jammy, then finished with burrata melting in the center, balsamic, and basil for a viral party appetizer.
Ingredients
- 2 pints cherry tomatoes
- 1/4 cup olive oil
- 4 garlic cloves, minced
- 1/2 tsp red pepper flakes
- 2 balls burrata cheese
- 2 tbsp balsamic glaze
- 1/4 cup fresh basil leaves, torn
- 1 loaf baguette, sliced and toasted

Preheat the oven to 400°F.

In a baking dish, toss 2 pints cherry tomatoes with 1/4 cup olive oil, 4 minced garlic cloves, and 1/2 tsp red pepper flakes.

Roast for 25 to 30 minutes, until the tomatoes are blistered and jammy.

While still hot, nestle 2 balls burrata cheese into the center of the tomatoes and let it sit for a minute to soften.

Drizzle with 2 tbsp balsamic glaze and scatter 1/4 cup torn fresh basil leaves over the top.

Serve warm with 1 loaf sliced and toasted baguette for scooping.
