Ingredients

  • 10 oz fresh baby spinach
  • 2 tbsp extra-virgin olive oil
  • 4 garlic cloves, thinly sliced
  • 1 tbsp lemon juice, freshly squeezed
  • 1/4 tsp red pepper flakes
  • 1/2 tsp salt

    Heat 2 tbsp extra-virgin olive oil in a large skillet over medium-high heat until shimmering.

    Add 4 thinly sliced garlic cloves and 1/4 tsp red pepper flakes. Cook for 30 seconds, stirring constantly, until fragrant but not browned.

    Add 10 oz fresh baby spinach in large handfuls, tossing with tongs as each handful wilts to make room for more.

    Cook, stirring frequently, for 2-3 minutes until all the spinach is wilted but still bright green.

    Remove from heat and drizzle with 1 tbsp freshly squeezed lemon juice. Season with 1/2 tsp salt, toss, and serve immediately.
