Scallion Oil and Peanut Topping
A fragrant Vietnamese finishing condiment of sizzled scallions in hot oil, scattered with crushed roasted peanuts. Drizzle over rice, noodles, grilled meats, or steamed vegetables for instant depth and crunch.
Ingredients
- 8 scallions (green onions), thinly sliced
- 1/2 cup neutral oil (such as vegetable or avocado oil)
- 1/4 cup roasted peanuts, roughly crushed
- 1/2 tsp kosher salt
- 1/4 tsp granulated sugar

Place 8 thinly sliced scallions (green onions) in a heatproof bowl with 1/2 tsp kosher salt and 1/4 tsp granulated sugar. Stir to combine.

Heat 1/2 cup neutral oil (such as vegetable or avocado oil) in a small saucepan over medium-high heat until shimmering and a scallion piece dropped in sizzles immediately, about 2 minutes.

Carefully pour the hot 1/2 cup neutral oil (such as vegetable or avocado oil) over the scallions all at once. The oil will sizzle vigorously — stand back slightly. Stir once to submerge the scallions.

Let the mixture cool for 2 minutes, then fold in 1/4 cup roughly crushed roasted peanuts.

Serve immediately over rice, noodles, or grilled proteins, or store in a jar at room temperature for up to 1 day.
