Sesame Rice Crackers
Crunchy Vietnamese style crackers made from jasmine rice and sesame seeds baked until golden brown. Perfect as a standalone snack or served alongside dips.
Ingredients
- 2 cups cooked jasmine rice, warm
- 2 tbsp tapioca starch
- 1/4 cup unsweetened coconut milk
- 1/2 tsp fine sea salt
- 1 tsp granulated sugar
- 2 tbsp white sesame seeds, raw
- 2 tsp black sesame seeds, raw

Preheat oven to 325F (165C) and line two baking sheets with parchment paper.

Combine 2 cups warm cooked jasmine rice, 2 tbsp tapioca starch, 1/4 cup unsweetened coconut milk, 1/2 tsp fine sea salt, and 1 tsp granulated sugar in a food processor.

Pulse until a sticky, smooth dough forms.

Fold in 2 tbsp raw white sesame seeds and 2 tsp raw black sesame seeds until evenly distributed.

Place portions of dough between two sheets of parchment paper and roll out as thin as possible.

Cut into triangles or rounds, transfer to baking sheets, and bake for 20 to 25 minutes until crispy and lightly golden.

Let cool completely on a wire rack to crisp up further.
