Shrimp and Okra Stew
A light and savory Caribbean stew with tender shrimp and succulent okra in a tomato-based broth with tropical spices.
Ingredients
- 1.5 lbs large shrimp, peeled and deveined
- 4 cups fresh okra, trimmed and sliced
- 1/2 cup onion, diced
- 1/2 cup red bell pepper, diced
- 2 garlic cloves, minced
- 1 lg can canned diced tomatoes
- 2 tbsp tomato paste
- 2 cups vegetable or chicken broth
- 1 tbsp fresh thyme, chopped
- 1/4 tsp cumin
- 1/4 Scotch bonnet pepper, minced (optional)
- 2 tsp lime juice
- 2 tbsp olive oil
- 1/4 tsp salt
- 1/4 tsp black pepper
- 2 tbsp fresh cilantro, chopped

Heat 2 tbsp olive oil in a large pot over medium heat.

Sauté 1/2 cup diced onion and 1/2 cup diced red bell pepper until softened, about 5 minutes.

Add 2 minced garlic cloves and cook for 1 minute until fragrant.

Stir in 2 tbsp tomato paste and cook for 1 minute.

Add 1 lg can canned diced tomatoes, 2 cups vegetable or chicken broth, 1 tbsp chopped fresh thyme, 1/4 tsp cumin, and 1/4 minced (optional) Scotch bonnet pepper.

Bring to a simmer and cook for 5 minutes.

Add 4 cups trimmed and sliced fresh okra and simmer for 8-10 minutes until okra is tender-crisp.

Add 1.5 lbs large shrimp, peeled and deveined and cook for 3-4 minutes until they turn pink and opaque.

Stir in 2 tsp lime juice and season with 1/4 tsp salt and 1/4 tsp black pepper.

Garnish with 2 tbsp chopped fresh cilantro and serve hot over rice.
