Sop Kambing
An Indonesian clear goat soup infused with warm aromatic spices like nutmeg, cloves, and cinnamon. Served piping hot with fresh celery and crispy fried shallots.
Ingredients
- 2 lbs bone-in goat meat, cut into chunks
- 8 cups water
- 6 shallots, minced
- 4 garlic cloves, minced
- 2 inches fresh ginger, smashed
- 1/2 tsp ground nutmeg
- 4 whole cloves
- 1 stick cinnamon stick
- 2 tsp salt
- 1/2 tsp ground white pepper
- 2 celery stalk, chopped
- 2 stalks scallions, sliced
- 2 tbsp fried shallots

Bring 8 cups water to a boil in a large pot, then add 2 lbs cut into chunks bone-in goat meat and simmer for 10 minutes.

Skim off any foam from the broth, then stir in 6 minced shallots, 4 minced garlic cloves, 2 inches smashed fresh ginger, 1/2 tsp ground nutmeg, 4 whole cloves, and 1 stick cinnamon stick.

Cover and simmer over low heat for 75 minutes until tender, checking that meat reaches an internal temperature of 160 F.

Season broth with 2 tsp salt and 1/2 tsp ground white pepper.

Ladle soup into bowls and garnish with 2 chopped celery stalk, 2 stalks sliced scallions, and 2 tbsp fried shallots.
