Sopa de Cebolla
A rich Spanish onion soup made with caramelized onions, pimentón, broth, and topped with toasted bread and melted Manchego cheese.
Ingredients
- 3 lbs yellow onions, thinly sliced
- 2 tbsp extra virgin olive oil
- 4 garlic cloves, minced
- 1/2 cup dry white wine
- 6 cups beef broth
- 1 tsp sweet pimentón
- 8 slices crusty baguette, sliced
- 1 cup Manchego cheese, shredded

Heat 2 tbsp extra virgin olive oil in a large Dutch oven over medium heat.

Add 3 lbs thinly sliced yellow onions and cook, stirring occasionally, for 35 minutes until deep golden brown and caramelized.

Stir in 4 minced garlic cloves and 1 tsp sweet pimentón, cooking for 1 minute until fragrant.

Pour in 1/2 cup dry white wine to deglaze the pot, scraping up browned bits from the bottom.

Add 6 cups beef broth, bring to a simmer, and cook for 15 minutes.

Ladle soup into oven-safe bowls, top each with 8 slices sliced crusty baguette, and sprinkle with 1 cup shredded Manchego cheese.
